Alfalfa Sprout Gazpacho

A cold soup, very refreshing on a hot day!


125g Alfalfa sprouts
1/2 cucumber, chopped
1 scallion (or onion), chopped
2 celery stalks
1/2 pepper, chopped
1 clove garlic
tomatoes (med.), chopped
1 zucchini (small), chopped

Blend 2/3 mixture in food processor or blender.  

Add to the rest of the mixture, along with 3 cups tomato juice.

Season to taste with salt & pepper.  Chill 1 hour,  serve.
