In the depths of winter, our options for local fresh produce are essentially non-existent.
Sure, you could go to the grocery store and select from among the long-travelled fruits and vegetables, but their flavours and nutritional value pale in comparison to the bounty of locally-grown summer crops.
What's a chef in a harsh northern climate to do? Grow your own winter crops, of course.
Now before you start picturing heat lamps strategically placed in your yard as tomatoes and corn flourish below them, think small – really small.
